Vegetarian Nachos with a Vegan Option


Hey beautiful people,

Tonight I quickly wanted to share with you one of our absolute favourite family meals. It's super easy and quick to make. This recipe will feed 2 adults and 2 toddler with enough left over Nacho Mix left for 2-3 more servings. Tonight our Avocado wasn't ripe so I substituted it with Basil Pesto (I was pretty sad because AVO'S are life! You can always add or take out any vegetables you like.) We also make these with Tortillas as a healthier alternative just cut them up into like triangles and bake them till crispy. Soz about my amazing photo I am very new to the whole food blogging but I will get better!


For the Nacho mix you will need:

1 can of a Five Bean Mix

1 can of Kernel Corn

1 Onion

1 Capsicum

2 cans of diced tomatoes

1 Nacho spice mix (we used Farrahs)

Salt and Pepper to taste

1 packet of Nacho Chips (we used Mexicano)

For the salsa you will need:

1 small Red Onion

1 tomato

Lemon Juice

Coriander and/or minced garlic OPTIONAL

To top it off:

Sour Cream or Coconut Yoghurt 

Grated Cheese or Vegan Cheese

Sweet Chilli

Sliced Avocado (Or you can mash the avocado or dice it up and add it to your salsa)

Dice your onion and capsicum then fry with a little olive oil until soft, add the tomatoes and cook until reduced. Drain Bean Mix and Corn and add, then add your Nacho Spice mix and cook for 5-10 minutes. Stir occasionally.

To make your salsa dice the tomato and red onion, squeeze half a lemon and mix through. If you want to add coriander, garlic and a little bit of Salt and Pepper and give it a quick mix.

Put your Nachos on a plate and add grated cheese, microwave for 30 seconds, when finished then add your bean mix on top, sprinkle a little more cheese then microwave for another 30 seconds. Top it off with your salsa, sour cream or coconut yoghurt, swirl some sweet chilli sauce and chuck your avocado on top and wa la!
