Do Christmas like a BOSS!

Before you know it Christmas is here! You have a million things to do and sometimes you just don’t know where to start (head exploding emoji) But not to worry, thanks to Countdown this Mama is here to save you time and money to spend it doing the things you love and enjoy.

Let’s start with my first Christmas hack, ONLINE SHOPPING! You may already do it, you may have heard of it and not used it but trust me! If you can do it you need to do it, it’s life changing. Sometimes we just do a Click and Collect and other times we get it delivered. If you want to avoid the crowds, use Countdown’s online delivery service. You’re welcome!

Okay first recipe, because it’s delicious, so easy to prepare and is ready so quick, you’re gonna love it!

Mushroom and Leek Pie

Dash of Olive oil

2 cloves of garlic finely chopped

400g of Mushrooms sliced

1 Leek sliced

2 Massels Vege stock cubes

250ml of Countdown Cream

Countdown Puff Pastry 1kg

1tsp of Thyme

Salt and Pepper to season

Preheat oven on Fan Bake to 200 degrees. Heat up olive oil in a non stick fry pan, add garlic, leek and mushroom. Cook until soft and fragrant. Add Thyme. Add cream and Vege stock cubes and reduce for 5 minutes while stirring occasionally. (Add more cream if you want to change the consistency)

Line dish with puff pastry sheets and then pour in mixture. Put a layer of pastry on top and use a fork to press pastry onto dish.

Poke a few holes on top of the pie and brush some Milk on top so it goes golden brown. (I used Soy Milk)

Bake for 20 minutes or until Golden and serve!


Ummmm how easy was that? Now let’s move onto the next thing, setting the table. Here’s Christmas hack number two - as we all know, setting the table can always get a bit crazy, so I like to get the kids and Hubby to do it (note, this may include bribery! (wink face emoji) I pop everything into a box and let them go crazy. We go all out with decorations, candy canes, tinsel and of course Christmas crackers. This year I bought all of these from Countdown, they have everything you need with so many Christmas products on price lockdown. At the moment their Candy Canes are only $1 for a 10 pack, AMAZING!

Now time for my second recipe. This is the easiest, yummiest potato gratin ever. It will literally take you five minutes to whip up and trust me it’s so delicious it will become a household regular.

2 cloves of garlic finely chopped

1kg of Baby Roaster Potatoes all slices up really thinly

1 cup of grated Countdowns Colby cheese

400ml of Countdown Cream

Salt and Pepper

Preheat oven on Fan bake at 200 degrees.

Spread out the thinly sliced potato in a big roasting dish, sprinkle garlic on top, pour cream all over, top with salt and pepper and cheese!

Bake in the oven for 30 minutes or until golden brown.


How good? Two delicious, easy dishes that will make sure you aren’t stuck in the kitchen this Christmas.

Last little hack, buy premade baking to save you time. Countdown has some amazing goodies for this time of year that are so delicious. The kids and fam will love them and honestly won’t notice the difference. This year we’re jamming the Plum Christmas Tarts and the Candy Cane shortbread cookies - yum!
